According to a recent study from the Uniformed Services University of the Health Sciences, Bethesda, MD, a diet high in salt increases the risk of gastric cancer. Apparently, high salt concentrations in the stomach increase the presence of an ulcer-causing bacterium with a penchant for becoming more virulent. The growth of the bacterium can create "morphological changes: Cells became elongated and formed long chains," according to researcher Hanan Gancz.
