Ah, a person after my own heart. I am a huge fan of this recipe… but probably the only person that I know who likes it. This “cheesecake” recipe resembles a hockey puck over a cake of any form, but for some reason I enjoy it. If you want to create a mouse, I recommend whipping the egg whites first and then folding the batter into the egg whites. If you want a “cheesecake” you are going to need to add tofu cream cheese. You can play around with the consistency and see if you like it better with or without the egg whites! For a change of pace, try taking out the chocolate items and throwing some fresh or frozen blueberries into the bottom of the pan OR make your own crust!! Yummmm!
