Broiled Fish with Ginger
1 lb. white firm-fleshed fish
? cup water
? tsp. soy sauce
? tsp. ginger juice
Wash fish under cold running water. Combine other ingredients and soak fish in marinade for one hour. Place on oiled baking sheet under broiler. Broil for 5-8 minutes on each side or until done. Serves 2-4.
1 large acorn squash, cut in half
Wash and cut squash. Remove seeds. Place on cookie sheet, cut side down. Brush with oil and bake at 350 F for 45 minutes or until soft. Test with a toothpick. Add any herbs or spices you?d like. Serves 4.
Homemade Banana Ice Cream
2 overripe bananas, frozen
2 ounces tofu, frozen
? tsp. vanilla extract
Run all ingredients through juicer and serve as centerpiece of meal or dessert.
Sweet Almond Milk
1/4 Cup Raw Almonds
1 Cup Cold Water
2 teaspoons pure maple syrup (optional)
Blanch almonds by adding them to a large skillet containing 1/2 inch boiling water, allowing them to sit in the water as it boils for about 30 seconds. The skins will loosen noticeably. Drain and pop the skins off. Place blanched almonds in a blender with 1 cup cold water. Run blender at high speed for 2 or 3 minutes until a thick white milk is formed. If you are going to drink almond milk straight, strain it through a fine sieve. If there is a lot of pulp, you have not blended it long enough. If you are going to use the almond milk in a shake, there is no need to strain.
