It’s been a while since I’ve been in the kitchen. But I went grocery shopping so in the next couple weeks I will (theoretically!) be posting a bunch of new things!! Including this…which I must say I’m quite proud of.
Alright, haters….get ready. I don’t like peanut butter. I know, I know, it must mean I’m un-American or some other terrible character flaw I have…but I just don’t! And I tried almond butter a few months ago and just wasn’t crazy about it. But I truly feel left out of this whole PB&J thing. So…I figure I’ll make butter from a nut I actually like…cashews! So yes. This is my first cashew butter and jelly sandwich. I’m sure it’s going to sweep the nation at any moment….okay, not so likely. But it’s dang good!
I realize the picture doesn’t look very pretty. It’s a bit runny, so next time I won’t add so much oil. But it’s still good, which is all that really matters!! So, how does one make cashew butter? SUPER easy!
Put the following in a food processor:
2 cups salted cashews (if you use unsalted, you might want to add a little salt)
1 tsp sugar
3 tablespoons of vegetable oil (add more for a creamier texture. I added 5 which was a tad much, so I’d say 4!)
Grind it up for about 40 seconds and you’re done!!
