Heirloom Tomato, Cucumber, and Red Onion Salad

Eating with the seasons is a superb way to enjoy the abundance of seasonal fruits and vegetables that are available during different times of the year. Heirloom Tomatoes

One of the best summer fruits to enjoy is heirloom tomatoes. Organic heirloom tomatoes are my absolute favorite variety of tomatoes! These amazing tomatoes are superior in both taste and variety over the most common tomatoes you see stocked in most grocery stores.

 

In the summer months these unique varieties of tomatoes are overflowing at the farmers’ market stands and in stores like Whole Foods. There are hundreds of varieties of heirlooms to enjoy and they vary in color, taste, shape, and texture.

 

Heirloom tomatoes are called heirlooms because they are a unique variety of tomato whose seeds have been cultivated, preserved, and passed down from generation to generation due to its unique characteristics. Tomato experts Craig LeHoullier and Carolyn Male, classified heirloom tomatoes into 4 types including commercial heirlooms, family heirlooms, created heirlooms, and mystery heirlooms. Heirloom tomatoes have colorful names like Brandywine, Green Zebra, Kumato, Black Cherry, Gold Rush Currant, Super Snow White, Golden Jubilee, Speckled Roman, and Black Russian.

All tomatoes are high in vitamin C, vitamin A, potassium, calcium, lycopene, and fiber. These nutrients help to protect your body from free radical damage and cancer. Lycopene is a fat soluble carotenoid that is best absorbed when eaten with a healthy fat source.

 

The tomato I used in my recipe today is a Kumato tomato. This succulent variety is a brown tomato that ripens from the inside out, and changes from dark brown to green when ready to eat. The texture is firm yet juicy with sweet flavor and an aroma that tantalizes and engages your senses.

 

My simple and delicious salad pairs these lush tomatoes with organic Persian cucumber, red onion, and delightful vinaigrette made with avocado oil, raw apple cider vinegar, and fresh orange juice.

 

The avocado oil has a delectable light avocado flavor and buttery mouth feel and it blends beautifully with the orange juice and tangy apple cider vinegar.

 

Organic Raw Apple Cider Vinegar

Organic raw apple cider vinegar with the mother is fermented vinegar that contains potassium, calcium, beta-carotene, pectin, malic acid, ash, enzymes, and probiotics. These important nutrients make raw apple cider vinegar a tremendous healing foods elixir for immune system health.

 

Some of the benefits of this potent vinegar include assisting with weight loss, lowering cholesterol, reducing inflammation, aiding digestion, and protecting against bacteria, fungus, free radicals, cancer, and inflammation.  Here is the brand of raw apple cider vinegar I used in the recipe.

Heirloom Tomato, Cucumber, and Red Onion Salad (CU)023

 

Serves 2

3 medium Kumato Tomatoes—cut into ½” -inch slices (or feel free to use your favorite heirloom tomato)

1 large organic Persian cucumber—cut into ¼”- inch slices

¼ small red onion—cut into ¼” -inch slices and separated into rings

1 sliced avocado—optional

 

Makes around ½ cup

2 tablespoons raw apple cider vinegar

2 tablespoons fresh orange juice

⅓ cup cold pressed avocado oil or your favorite extra virgin olive oil

Himalayan sea salt—to taste

 

1. Place vinaigrette ingredients in a glass jar with a lid and shake until well blended.

2. Place sliced tomatoes on two round salad plates, layering until the plate is covered.

3. Arrange cucumbers and onions on top of tomatoes. Top with avocado slices if using and drizzle with vinaigrette. Enjoy immediately.
