I have such a treat for you today! Gayle-Marie Noga owner of Giggles Gluten-Free and Custom Bakery is sharing her Hearty Winter Soup recipe with us. It’s a bit chilly and nothing warms me up like a great bowl of soup. This recipe is so easy too – LOVING it. It combines some great ingredients that will bring the whole family running for seconds. So pull up a stock pot and let’s getting cooking!
INGREDIENTS:
In a large soup pot:
- sauté 4 tablespoons of olive oil or coconut oil
- 1 medium organic onion
- 3 cloves of minced garlic
- 2 stalks of organic celery, sliced in ¼ inch pieces
- 3 medium organic carrots, sliced the same as the celery
- 2 small organic sweet potatoes (not yams)
- 2 bay leaves
- 1 tablespoon smoked paprika
- ½ tsp. curry powder
- ½ tsp. dried mustard
- 8 cups water, organic chicken stock or vegetable stock
- 2 cans of plum tomatoes cut to bite size pieces
- 4 cups of white navy beans, if using canned beans drain and rinse the beans *
- Salt and white pepper to taste
Bring to a boil for about 1 minute and let simmer for about 2 hours to finish cooking the veggies and allow flavors to blend. Serve with your favorite bread and salad.
*This recipe can be used with fresh dried beans that have been soak and cooked the day before or with pre-canned beans. If making this soup with fresh beans, do not add salt to the soaking water as this will make the beans stay hard. Soak overnight, sort beans to remove any foreign objects such as small rocks and such. Bring beans to a boil in enough water to double the amount of beans: such as 4 cups raw beans 8 cups water. This will allow the beans to soak up the water and soften. After the beans come to a boil, turn off the burner and allow to finish soaking overnight. Drain off excess water and store in the fridge until needed.

Just over 20 years ago I was diagnosed with Celiac it was life changing for me. As an active young adult being struck down and unable to continue with my active life was devastating for me. My children were without a mother for most of 5 years prior and when I was there I was mostly lost in a fog. Five doctors later I was finally able to answer the one question I had, what was it that was killing me. After two battery of test and 6 different labs to verify them I was diagnosed. The doctor who diagnosed me told me you would have two more months to live if I continued eating the way I was.
I walked out of the office never to eat Gluten related products again, and for the most part I haven’t. Thus began my journey to eating and developing new and great tasting baked and cooked products to share with others.
Giggles was born after many years of working with strange and wonderful flours, xanthan gum and other sticky food glues, recipes that were time tested changed to new great tasting baked goods. Meeting new challenges, have to this day kept me on my toes, learning to help others with dairy and egg allergies, then spice, nut and soy allergies brought increased understanding of how food can change a person or families lives. I am now embarking on the very real Palio diet needs. I have found that with each new means of staying healthy means learning and growing with the changes. I just love these changes, they make me stretch and grow, learning new food groups, and how to go back to our earlier roots.

Another adventure that Gayle has taken on are some wonderful “pets”. Some have asked “Why Llamas” well, they are one of my other passions in my life, while I was still recovering from my almost death, I went backpacking with my husband, I almost didn’t make it to the end of the hike. I came home and found that I was not ever going to be able to pack again as long as I carried the pack. I can hike as long as it is not too much of a climb, but I am only allowed to pack up to 10 pounds. So in order to enjoy the great outdoors my husband and I found pure joy in taking care of and packing with llamas. They watch out of us and really enjoy getting out and doing something. Careful not over load them we are able to have fresh foods, not the freeze dried meals that we used to carry. Warmer sleeping gear, and chairs to sit on. We found we can go for longer trips and have sentries help watch for l elk and deer, and they also will alarm when things are not quite right around the camp. Our grandkids love to go with us since they can bring the inflatable raft with us to use in the many lakes we can get to. And the friends we have made and spend time with has been most rewarding.
