This is good advice - I've heard it before as well. I think that starting with your spinach and avocado will definitely help with any eye issues... okay, enough. I'll stop. But for real, there is something refreshing about having a full plate of brightly colored food. And I will admit, I feel more satisfied after a meal that was brightly colored. One of my friends barely eats veggies at all and his plate is always tan - bread, meat, etc. Nothing appears more unappealing to me. So, I think there is something to be said for the color combo.
