Healthy Super Bowl party tips – here’s the lineup

Are you ready for some football?  The question this week is how to enjoy our American pigskin game with everyone while snacking on fun-loving food.  Share your excitement at your Super Bowl party without missing a beat in these healthy tips and ideas. I wanted to make up some simple and quick foods that are easy on the wallet and the stop watch.  So grab a pen and paper and let’s get ready to cheer our teams on. With a little planning ahead of time you can relax, grab a tater and enjoy the game.

Here’s our healthy lineup:



Quarterback: Buffalo Chicken Casserole

It’s going to be the center of the team. This baby will call the shots and every eye is going to be on him. You can even make this ahead and then bake 30 minutes before the game starts. Serve with a side of vege sticks and nachos. I like using organic, blue corn ones since they give a fun color and the taste is out of this world. Then watch out for a touchdown because this is going to be devoured in minutes!

 

 

Linebacker: Chili stuffed potatoes

This is your second line of defense. In case you need “beefing” up a bit here’s a little something to rid the hunger pains.
Prebake potatoes in their skin (piece with fork) at 350 degrees for 1 1/2 hours. Set aside.
Heat 1 can of your favorite organic chili (no sugar).  My favorite is Amy’s Organic Chili .  This great chili is all organic, no sugars, and it comes in a variety of spiciness and flavors like Southwestern, Black Bean, Vegetarian or just plain Regular kick in your pants chili.  Top potatoes with chili, organic cheese, organic sour cream – you get the picture!

 

Runningback: Vegetable sticks

This guy does all the hard work. In for every play just about and a workhorse on the team. He can be the center of attention if you load him up with a great dip in the center, or play along side with the rest of the team. My favorites are Celery sticks
Carrot sticks
Cherry tomatoes
These are all available in the organic section and at a great price.

 

 

Tight end: Pimento cheese

The tight end has several jobs to do. So I picked this quick recipe that can be used in lots of different ways.
Grill it for an amazing sandwich or panini on our Nutty Bread . Serve with vege sticks or bread wedges, or place some gluten free crackers along side. Use your imagination.  It has so many functions and fills the need in between plays.  This is such a healthy, tasty version you won’t be able to put it down.

 

 

Receiver: Brownies

Who’s your go to guy? You know the one everyone is always asking about. It’s always dessert – you know it. You wanna watch the whole team but the star that shines is always the receiver making an unbelievable catch. This brownie recipe is the best receiver on your team. Make it the night before and store in the refrigerator. It’s ready to go when the party starts. For added fun use a cookie cutter shaped in a football (or you can just free hand cut it into football shapes). Pop in a toothpick and you are ready to go.

Now the biggest problem to tackle will be deciding which team to cheer for. As you know I’m a Carolina Girl and my Panthers didn’t make it to the playoffs this year, wah, wah!       So I’m having a hard time deciding who my choice for the Super Bowl should be.
