I'm convinced that you can eat healthier and stay in better shape by packing your own lunch. Stock up on small reusable containers and keep it simple.
I always try to include a vegetable and a fruit and it's not too hard. I snack on sliced oranges in the morning and I pack a cooked vegetable (sweet potato, brussel sprouts, squash, tomato, avocado). The veggie keeps fine from frig to work and I don't heat them up so no vitamins are lost.
I recently discovered that I don't need to add jelly to my peanut butter sandwich. I simple bring an apple or banana and eat the fruit as I eat my bread and peanut butter.
I've replaced high-fat nuts with cooked garbanzo beans ever since I had the salad at the Stanford BeWell Free Lunch.
Would love to hear more ideas for making lunch simple and healthy.
