I wanted to share a quick lunch idea while I’m on the road, headed to San Diego for Blogher 11. If you are going to be there, come find me! I’d love to meet you in real life!
Lunchtime doesn’t have to be PB&J for your kids every single day! This lunch is a favorite of mine. It’s easy and fast since there is no meat to cook. When wrapped in plastic wrap, or enclosed in a sectioned lunch container , it’s easy to keep fresh until lunchtime.
So, to make our pitas taste like tacos, we used:
Corn
Black Beans
chopped tomatoes
Chopped green onions
Chopped avocados
taco seasoning
Lettuce
Whole wheat pitas
Mix all ingredients (except lettuce and pitas) in a bowl. Scoop into pitas when preparing lunch.
** PS, the top right section of this lunch container includes some dark chocolate almonds (powdered dark chocolate), and it tastes amazing!! I will soon figure out how to make these on my own.
