Cooking your own dry beans, rather than buying canned beans is healthier, however, its very time consuming. That’s why if we cook a pot of beans, I will portion the beans into small 1 cup freezer bags and take them out as we use them. Cooked beans can be frozen or refrigerated for long periods of time. They thaw very quickly, and can be used in so many different meals. Visit this post for bean cooking times .
This freezer meal however, goes beyond the frozen black beans we already have in the freezer. For Taco salad, I will cook up ground beef (Grass fed if you can find it, Very lean ground beef if you can’t*). I add cooked black beans and taco seasonings. Then I portion the taco-bean-meat into 1 lb servings, and put in a freezer safe bag.
2 tsp dried minced onions
1 tsp chili powder
1/2 tsp crushed dried red pepper
1/2 tsp dried minced garlic
1/4 tsp dried oregano
1/2 tsp cumin
1 tsp salt
1/2 tsp cornstarch
Then on dinner night, we just pull out a bag of already cooked meat and heat it up. The rest of the veggies for taco salad are all fresh and crunchy. Just like we like them
* Lean beef vs. grass fed beef. If you can get grass fed beef, the Omega 3’s fats are higher. In grain fed beef, the Omega 6’s are higher. We get plenty of Omega’ 6’s in our diet, and not enough of the healthy Omega 3’s. For this reason, if you can’t get the better fat, it’s better to get a product with less fat overall. (source)
