Healthy breakfast recipe: Rice pudding with berries

A healthy breakfast only takes a few minutes to prepare if you start the preparations the night before!
Healthy breakfast ideas can come from the most unexpected ingredients! Rice pudding is one a healthy breakfast recipe I quite like (especially since I prepare mine with brown rice)! I always prepare my rice pudding in a small batch for the week and reheat it as needed and I add loads of healthy ingredients from nuts to dried cranberries to unsweetened shaved dried coconut.
Did you know the Chinese often begin their day with a congee, or rice porridge?
This breakfast rice pudding recipe, sweetened up with cinnamon and berries, is a great way to use up leftover rice (or you can make it with fresh rice as well).
For the Meatless Mondays, I want to offer you a healthy and quick breakfast recipe that will you’re your morning started on the right foot!
This no-brainer recipe does just that. You will never have an excuse to skip breakfast and eating a healthy breakfast has just become child’s play!
2 cups brown rice, precooked
1-1/2 teaspoons cinnamon
1/2 cup almonds, slivered
3 cups soymilk
1/2 cup mixed berries
Mix all ingredients and simmer until thickens stirring constantly. Serve hot or cold and garnish with berries.
