A healthy breakfast only takes a few minutes to prepare!

For our Meatless Mondays, I want to offer you a healthy and quick breakfast recipe that will get your morning started on the right foot!

This no-brainer recipe does just that. You will never have an excuse to skip breakfast and eating a healthy breakfast has just become child’s play!

>>>INGREDIENTS<<<

2/3 cup rolled oats

2/3 cup millet

4 cups water

1 medium apple, chopped

1 cup chopped dates

2 ounces chopped walnuts

1 teaspoon lemon juice

1 teaspoon vanilla extract

1 teaspoon cinnamon

pinch of ginger

pinch of cardamom

>>>INSTRUCTIONS<<<

1. Spritz the inside of your crock pot with a cooking spray.

2. Then just throw everything into the pot right before you go to sleep and turn the crock pot on its lowest setting.

3. Let simmer overnight (6 to 8 hours).

4. The apples and dates are naturally sweet - so no extra sugar is needed, but you may want to top this with a splash of low-fat milk.
