Healthy Bodies & Snacks: Kale Chips!

Happy Friday, Happy Friday! Yes, I’m singing a little song.  Today I’m trying to mix some work with some play and I’m pretty excited about it. Before I get on with my post, I want to say I LOVED reading all your comments yesterday. You SHOULD be proud of yourselves! If you didn’t leave a comment yet, show yourself some LOVE and share it!

Yesterday I had some fun hangin’ with Jill Hanner and making some delicious recipes. Here’s a hint of what’s to come in our Valentine’s Day series!

I’m so happy to have met so many wonderful people in real life and virtually through FitFluential . I feel so lucky for all of their support AND even LUCKIER I can hang out with Jill in real life since we live so close!

In the mean time I get some requests to do recipe vlogs so you can actually see what I’m doing/how to make a particular recipe, instead of just reading them. I know some of you love the vids and some of you possibly don’t care for them…and that’s ok! That’s why I write out the recipes below so you can still read it. Especially if you’re blog readin’ at work!

I love mostly all greens, but kale is certainly at the top of my list!

Kale is detoxifying, antioxidant rich, cancer fighting, can lower cholesterol and is SUPER high in vitamins K, A, and C! It also is filled with fiber, low in calories, is anti-inflammatory and provides cardiovascular support! Read more about the benefits of kale here !

Kale Chips (serves 2…or 1 )

Ingredients

  • 4 cups of kale, broken up into pieces
  • 2 tbsp extra virgin olive oil
  • sea salt
  • optional: nutritional yeast

Preheat oven to 400 degrees. In a bowl or right on a baking sheet, drizzle kale with olive oil. Using your hands, mix it well making sure kale is evenly coated with olive oil. Sprinkle with sea salt. Bake for 6-7 minutes, making sure kale gets crunchy, but not burned. Eat immediately! 

These are perfect for a snack or side dish! And low in calories too, especially when you use an oil mister! I love my Prepara glass spray bottle, which I bought from Bed, Bath & Beyond, but you can get it from amazon if you’d like too! The only down side is that it has to be pretty full to work. So don’t let it get low!

I’m off to get a workout in and get a manicure among other work things! Gotta get the rest of the V alentine’s Day special Pure Bliss Eats’ orders out!
