Harlem Globetrotters + Kale, Brussels Sprout, Dried Cherry and Pistachio Salad

This week I made batch of Salads in a Jar to have on hand for quick grab and go lunches.  These grab and go salads worked out well. 

The theme for this weeks salads were Kale and Brussels Sprouts.  Kale and Brussels Sprouts hold up well as leftovers and I even think they taste better the next day when all the other goodies marry together in the salad.

Kale, Brussels Sprout, Dried Cherry and Pistachio Salad in a Jar
makes 4 servings

1 bunch of Lacinato Kale, thinly sliced1 bunch of Brussels Sprouts, sliced into thin ribbons1/2 cup of red onion, thinly sliced1/4 cup of dried cherries1/4 cup of pistachio meats
Dressed with 1 tbsp of EVOO, 1 tbsp of Balsamic Vinegar, 1 tbsp Dijon Mustard
Toss all the ingredients together and store in mason jars.Top with Avocado when ready to eat.

This is a good one!  Very hearty and satisfying.
Have you heard of the Harlem Shake?
My daughter's team did a really cute version of the Harlem Shake and I feel the need to share :  )

We have a great coach and the team had a ball making this video~
We are all about basketball these days and since it is a rite of passage, we are taking our kids to the Harlem Globetrotters this evening.  Steve and I both went as children and loved it so we are hoping that our kids do too!
