Happy Mother’s Day

I hope that everyone had a fantastic Mother’s Day! Happy Mother’s day to all of the amazing moms out there! My mom spent the weekend down in Palm Springs with my Aunt and she was very happy. I’m not sure if she reads this, so I’ll wait until tomorrow to share her gift with you.

I have been a very busy bee lately. My eats have included many fun foods over the past few days.  Here are some of the highlights:

Angela’s Banana Soft Serve Vegan Overnight Oats Very good way to start the day

Kelp Noodles w/ Veggies & Peanut Sauce – I tried to like this, but it didn’t taste good.

Angela’s Parsnip Fries - but I had to make it with sweet potatoes.

We don’t have the kitchen table up yet, so the stairs are our table for now.

Layla doesn't beg, but she gladly accepts left overs.

A Flax4Life blueberry muffin with coconut oil smeared on top. Does coconut butter work even better for this? I haven’t tried it yet.

And my new favorite Trader Joe’s Salad

Tonight my sister and I went to dinner at Red Robins with my Grandma, Grandpa and dad. I didn’t have my camera with me, and ordered the lettuce wrapped burger. It came with a small house salad instead of their bottomless fries.

This wasn’t everything that I consumed over the past 48 hours, but what I didn’t show was much more random and nothing flashy.

I had to take a quick shot of how nice and sunny it was in Portland today. The great weather brought out lots of moms and daughters.

I’ll be back tomorrow with my plans for the week and a recipe.
