Happy Monday Healthy Banana Oatmeal Pancakes + The Art of Eating Webinar Giveaway!

I thought I would start your Monday off right by sharing one of the many recipes that you will get by joining The Art of Eating: Eat Your Way to Happiness and Health webinar.

Gluten Free and Vegan Banana Oatmeal Pancakes
Makes 8 pancakes

1 1/2 cups unsweetened vanilla almond milk2 bananas, chopped1/2 cup gluten free rolled oats1/2 cup coconut flour1 tbsp + 1 tsp baking powder1/2 tsp sea salt1 tsp vanilla extract
Banana SlicesMaple Syrup
1. In a blender, puree milk and oats until smooth.  Add in bananas, flour, salt, baking powder and vanilla.  Blend a few seconds more.  Let batter rest for 10 minutes.2. Heat large skillet over medium heat.  Mist with nonstick cooking spray, then scoop batter into pan in 1/4 cup increments.  Reduce heat to medium low and cook pancakes until air bubbles appear and bottom of pancake is golden brown.  Flip and cook for 3-5 minutes more.  Top with sliced bananas and maple syrup.
These turned out amazing!  Moist and delicious and my kids loved them.  They also save and I heated some up for breakfast this morning and they were still delicious.
