Happy Hanukkah + Healthy Pumpkin Spice Bread

Good Afternoon and Happy Hanukkah!

I am wishing all my Jewish friends a Happy Hanukkah today.  One of my clients had spent the previous day making a gazillion latkes  (she has 5 kids) and it was so fun to hear about their Festival of Lights plans.  All this talk of latkes made me want to make some myself!  But instead, I spent the afternoon baking many loafs of Pumpkin Spice Bread.

This particular recipe is one of my daughter's favorite and she wanted to give a loaf to all of her friends.

This quick bread is moist and delicious and I cut some of the fat by using a combination of applesauce and coconut oil as well as used Whole Wheat Pastry Flour to up the fiber content.  
Healthy Pumpkin Spice Bread
1 cup evaporated cane juice sugar 1/2 cup brown sugar 2 cups whole wheat pastry flour 1-1/2 cup all-purpose flour 2 teaspoons baking soda 1 tsp baking powder 2 teaspoons ground cinnamon 3/4 tsp cloves 1/2 tsp nutmeg 1 teaspoon salt 2 eggs 1 can (15 ounces) solid-pack pumpkin 1 cup buttermilk 1/2 cup unsweetened applesauce 1/3 cup coconut oil 1 cup walnuts, toasted and chopped In a large bowl, combine sugars, flours, baking soda, baking powder, spices and salt. In another bowl, whisk the eggs, pumpkin, buttermilk, applesauce and coconut oil. Stir into dry ingredients just until moistened. Fold in toasted walnuts. Transfer to two 9-in. x 5-in. loaf pans coated with cooking spray. Bake at 350° for 45-55 minutes or until golden brown and a toothpick inserted near the center comes out with moist crumbs. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 loaves (16 slices each).

On the food front-- I started the morning off with a warm glass of lemon water and:
 Greek Yogurt topped with KIND Oats & Honey Granola and Fresh Raspberries
1 cup Fage 2% Greek Yogurt 1/3 cup KIND Oats & Honey Clusters with Toasted Coconut 1 cup fresh raspberries Yum!

Oats & Honey Clusters with Toasted Coconut combine full flakes of toasted coconut, a touch of honey and whole grains amaranth, quinoa, oats, millet, and buckwheat for a naturally sweet snack. These hand-crafted clusters are a good source of fiber and provide 17g of whole grains per serving.
This granola is pretty darn good!  I will definitely be buying this again.

Lunch was a quick and tasty- Coconut Vanilla Spinach Smoothie
Coconut Vanilla Spinach Smoothie
1 cup So Delicious Coconut Milk 1 scoop Sunwarrior Raw and Vegan Vanilla Protein Powder 1/2 a frozen banana 1 cup fresh spinach
Combine above ingredients in Vitamix or Blender and blend until smooth and creamy.


I am feeling a bit "plump" from all of this celebrating and baking and this smoothie made me feel clean and energetic.  Just what the doctor ordered.

Following are a few highlights of our weekend and possibly why I am feeling a bit "plump"

This is the gorgeous cake from The Bakery Bar that was served at Julia's 40th B-Day!

One layer was Chocolate with Chocolate Mousse Filling and the other layer was Carrot Cake with Cream Cheese Frosting.  Yes.... I did try a bite of both of them and they were pretty freaking amazing.  I am using the 3 Bites Method this holiday season.  Meaning that I am allowing myself 3 bites of anything decadent but trying to leave it at that.  Now.... I may have had more like 5 bites of the Carrot Cake.... Yum!

This is the gorgeous 40 Year Old Julia who honestly looks like she is in her 20's!
