Happy Election Day + Healthy Bittersweet Caramel Bites

Posted Nov 06 2012 5:09pm
Good Afternoon and Happy Election Day!

I hope everyone is getting out to vote today.  Oregon makes it super easy to vote and I dropped my ballot off last week.  But for all of you waiting in long lines, I am sending you good vibes and sharing a fantastic recipe that will surely bring a smile to your face-  Healthy Dark Chocolate Caramel Bites!

To honor this lovely day, I am also offering a $20.00 discount on my upcoming webinar:  The Art Eating: How to Stay Sane, Sexy and Slim During the Holidays.  This offer is good until polls close at 8:00pm.  Click here for more details.

Okay, now let's get down to business.  I saw a recipe for Homemade Rolos on my all-time favorite vegan blog Oh She Glows and knew I had to make them ASAP! Be fair warned that these little bites of goodness are addicting and I could not believe how much they tasted like chocolate covered caramels.  I think they tasted even better because they didn't have any junk in them and are vegan and gluten-free to boot!

 Healthy Bittersweet Caramel Bites
recipe adapted from OSG- Homemade Rolos

 Vegan, gluten-free, and addicting.
Ingredients (18 bites) Date Caramel
200 grams pitted soft Medjool dates (about 11 large)1/2 tbsp SunButter (or nut butter of choice)1 tsp pure vanilla extractpinch of fine grain sea saltDipping Chocolate
scant 1/2 cup bittersweet chocolate chips ( I used Sunspire 65% Cacao Bittersweet Chips)1 tsp coconut oilGarnish
Instructions1. [Note: You want to use very soft Medjool dates. If yours are firm, soak in water to soften before using. Be sure to drain well.] Process pitted dates in food processor until a sticky paste forms. Now, add in the Sunbutter, vanilla extract and a pinch of fine grain sea salt. Process until combined. The mixture will be SUPER sticky, but this is a good thing!
2. Scoop out the sticky mixture into a bowl and freeze for about 10 minutes. Chilling it makes the caramel easier to shape into balls. After chilling, lightly wet your fingers and shape caramel into small balls to make about 18 balls total.
3. Place balls back into the freezer for another 10 minutes on a parchment lined plate. Meanwhile, melt chocolate chips along with 1 teaspoon coconut oil in the microwave for 30-60 seconds. Be sure not to burn chocolate.
4. Remove balls from freezer and dunk each ball into the melted chocolate, one at a time. Roll around to coat. Tap off excess chocolate and place back onto parchment-lined plate. Sprinkle with chia seeds or scant amount of sea salt.  Repeat for the rest.
5. Freeze again for at least 20 minutes until set. Bites taste best straight from the freezer and will soften (but will not melt) at room temperature. So Easy and So Freaking Delicious!

Now if this does not make you happy, then I don't know what will : )
I am off to work but I hope everyone had a GREAT DAY!
