I have had a fabulous birthday with a bunch of great eats and I just had to recap all of my favorites on one page.
It was a gorgeous day, albeit a bit hot, and we ended up going swimming. I swam laps for 1 hour and had lifted weights earlier this morning so I am feeling pretty good right about now.
So a quick recap of the day
Started off the day with the most gorgeous bowl of Peach Melba Chia Oats.
Lunch was the absolute best Caprese Sandwich. Oh so good... this was my big treat for the day!
Caprese Sandwich
1 slice Ciabatta Bread, halved
Mini Heirloom Tomatoes, halved
Fresh Mozzarella
Fresh Basil
Olive Oil
Sea Salt + Cracked Pepper
Dinner was one of my favorites--- Greek Yogurt Bowl.
Greek Banana Berry Bowl
1 cup Chobani Fat Free Plain Yogurt
1 small banana, sliced
Fresh Raspberries and Blueberries
1 tbsp chia seeds
1/4 cup Oatmeal Squares
Drizzle of Honey
This was the perfect after-swim dinner. It was cool and refreshing, packed with protein and potassium and I loved it.
I admit that I am thinking of having a little sweet treat...... and have picked up a box of Chocolate Cheerios.... I know... what am I doing. I am not even going to tell you that they were for the kids because actually I am the one who wanted to try them. So I think I might have a little bowl for dessert. I will have to let you know how they are tomorrow... but I have heard that they are good and they are only 100 calories for 3/4 of a cup. I was actually thinking they might be a great sweet treat on the road.
You know I am freaking out a bit about driving for days on end without a lot of exercise and A LOT of road food. I am coming up with a plan. I am actually going to take my hot air popcorn popper with me in the car and pop up some corn in the hotel each night to have a low-fat and high fiber snack and I think the kids will like it too. We are going to make a trip to Whole Foods before hitting the road to stock up on healthy snacks as well. I am thinking about traveling with fresh fruit such as apples and bananas, dried mangos, goji berries, carrots & celery sticks, cereal and possibly some bars but for some reason those don't really work for me. I eat a bar and then still want to eat a real meal. Do any of you have any favorite ideas for road food? Any suggestions are welcome!
I am also planning on bringing a set of weights, a band and 1 medicine ball in the car so I can do a few exercises in the hotels at night. It looks like it is going to end up being 2 days of major driving and then we will get some exercise by walking all over Disneyland and L.A. then off to San Fran which is a major walking city and then another couple days of driving. Once we hit Portland, I am going to throw on my running shoes and hit the ground running literally. I also forgot that unloading the PODS will also burn some cals so I will end my freak out now.
My first POD will be dropped tomorrow between 11:15am and 2:15pm and I am psyched. I am ready to get this show on the road. Woo Hoo!
