This dressing was inspired by Alton Brown’s famous “Guilt Free Caesar Dressing”, of which I am a huge fan. It’s a tofu-based creamy vinaigrette with orange zest, orange juice, and white wine or champagne vinegar. Here are a few benefits of this recipe:
1. It’s a high protein, moderate fat dressing.
2. It tastes amazing, with a subtle orange hint.
3. It’s vegan.
4. It takes 2 minutes to make.
Now, onto the food!
1/2 block of silken tofu
1/4 cup white wine or champagne vinegar
1/2 tbsp. brown mustard
1 tbsp. olive oil*
1 zest of 1 orange
1 orange, peeled
Stevia, to taste**
Basically, you put everything in a blender or food processor except the stevia. Blend until it’s smooth. Then taste is, and add stevia until it’s sweet enough for your liking.
This recipe can be easily modified. Next time I make it I’m going to use either raspberries or strawberries instead of orange. So, feel free to be creative.
* If you want more orange flavor, you should try using a combination of olive oil and orange oil.
** Use a sweetener of your choice. Just make sure to pick something that isn’t going hurt your body!
