Guest Blog: Monterey Jack, Corn, and Roasted Red Pepper Risotto

Hello Carrots N’ Cake readers!
I have been toying around with the idea of starting a food blog for a little while now, and just recently, I started my own ( www.foodforliving.wordpress.com ). While preparing one of my favorite recipes to make (and eat!) the other night, I snapped a few photos: I give you, Cooking Light’s Monterey Jack, Corn, and Roasted Red Pepper Risotto - what a mouthful (pun intended). The pictures are just okay, but the end result is delicious.
Here are the ingredients needed for the risotto: The next few pics show the risotto at different stages of the cooking process - from the dry rice to the completed meal.
