It has been WAYYYY too long since my last foodie blog! Which is a shame because I’ve made some pretty tasty things! With Pinterest as my latest obsession, I’ve been experimenting with a ton of recipes…and this shall be my outlet for sharing!
I have recently discovered a new spin on the classic grilled cheese sandwich, and it’s SO delicious that I may never go back!! And it has nutritional benefits as well! This sandwich has 5 simple ingredients, and makes use of strawberries and basil (or spinach) which are all great this time of year!
This recipe is crazy easy to do!
Chop up about 1/2 cup of strawberries and leave them to marinate in 1-2 teaspoons of Balsamic Vinegar for about 15 minutes. If you’re in a time crunch you could do it for about 5 minutes, but the longer they have to soak up all the flavor, the better!
Put the cheese of your choice and basil (or spinach) on piece of bread. I used Havarti cheese which is right next to all the cheese in the grocery store, but smoked cheddar or jack would be good too. You really can’t go wrong with cheese, it is whatever you choose! Then put the strawberries on this half as well, leaving the other side with more cheese.
Place the sandwich halves on an oiled skillet and heat until the cheese is melty.
When I first heard of this combination I was a little weary, but it is SO DELICIOUS!! It’s a fresh, summery take on a classic that needs to be shared! And as an added bonus you get a serving of fruit, antioxidants and digestive benefits from the balsamic, and necessary vitamins from the greens! It’s sure to become a new favorite!
