Soup seems to speak to me that Fall is here. Truth be told I would eat soup on any day of the year, hot or cold, Summer or Winter. I actually didn't become a soup lover until my adult years, and now I make it at least once a week. I'm not sure if that is why my kids love it so much, but they do! The great things about soup is that you can pack it full of veggies and kids will eat it. Some of our favorites are:
I always like to have some kind of bread to go with my soup. These grilled cheese soup boats are the perfect thing for kids - they can float them on top of the soup and then dip them or use them as a scoop. And they are really easy and fast to make!
Remove the crust from your bread. This just makes it easier to work with. You can save the crusts, cut them into smaller bite size pieces, bake them and have little soup croutons.
Press your bread into th e muffin tin.
Your bread is liekly to be to too big for the tin and so you might have to fold it a bit to press it all in.
Once your bread is in the tin, sprinkle with cheese. Bake them in the oven at 375 degrees F, for about 10 minutes or until they start to turn golden brown on the edges and the cheese is melted and bubbly.
Make yourself some sails out of veggies to complete the boat. (we love cucumbers and baby tomatoes) Then set sail in your soup!
