Greek Salad Sandwich Two Ways + Green Monster Smoothies

Good Morning!

I hope everyone is doing well today.  I just got back from a beautiful run with Gumbo( my dog) in Laurelhurst Park where the sun was peaking through the clouds and the air was crisp and fresh.  The run was just the ticket to get my engines going today.  I am a bit sore from lifting weights and needed to stretch out my bones and get outside.

So I have been promising to share with you a fabulous sandwich that I have been thoroughly enjoying that last few days.  It is a Greek Salad Sandwich and I got the recipe from Martha Stewart's Everday Food March 2011 issue.
Greek Salad Sandwich
1 cup canned chickpeas, rinsed and drained1 tablespoon fresh lemon juice1 tablespoon extra-virgin olive oil1/4 cup fresh parsley leaves
In a food processor, pulse the above ingredients until finely chopped.
In a small bowl stir together:
1/2 small red onion, thinly sliced1 tbsp fresh lemon juice2 tsp olive oilsea salt and crack black pepper
In another small bowl mash:
3 ounces of feta cheese and 1 tablespoon olive oil
Spread chickpea mixture on 4 slices of rustic bread, olive bread (I used ezekiel english muffin and a whole wheat tortilla)
Top with:1/2 medium cucumber1 tomato, thinly slicedRed Onion Mixture
Then layer other half of bread with the Feta Cheese Mixture.
Voila!  You then have a very fresh, tasty and satisfying sandwich to enjoy.

The ingredients
I love, love this sandwich.  It is super tasty and I love the tangy, salty taste of feta cheese which plays off of the creamy chickpea mixture.  The crunch of the cucumber and the freshness from the lemon all marry well and make this sandwich a real winner.

The next day I made the sandwich on a Low Carb Whole Wheat Tortilla and it was delicious as well.

Now on to the Green Monster Smoothie experiments.  I decided to go wild and buy some Wheatgrass and make a Kale, Wheatgrass Banana Smoothie. Hmm.... my thoughts are that wheatgrass is a bit strong and I think I may have need to cut some sweetness into the mix besides banana to make it taste a little better. 

Anyone have any good Wheatgrass Smoothie Recipes for me?
Kale, Wheatgrass Banana Smoothie
1 cup So Delicious Unsweetened Coconut Milk Beverage1/2 a frozen banana1-2 cups chopped Kale1/4 cup wheatgrass3-4 ice cubes
Fill up the Vitamix with the above ingredients and turn it on at a Variable 1 quickly turn to Variable 10 and then to High.  Blend for about a minute.  Pour smoothie into glass and enjoy!
I am still tweaking the recipes trying to figure out what tastes the best.  I will tell you that I made one that was a complete bomb.  Ha!  I had high hopes for this smoothie and actually think it would have been good if I had in fact peeled the grapefruit before throwing it into the Vitamix.  I just think it is so cool that you can blend up whole fruits that I opted to keep the peel on and it was way to Tart and I like tart.  I did indeed gulp it down because I was not going to let all that good nutrition go to waste but if you do make this smoothie please peel the grapefruit so it will taste good!!

Grapefruit, Mango, Spinach, Smoothie
1/2 cup mango juice1/2 cup water1/2 cup greek yogurt1/2 red grapefruit, Peeled 1/2 cup frozen mangos2 cups baby spinach1 tbsp chia seeds
Place the above ingredients in the order listed in the Vitamix. Turn it on at a Variable 1 quickly turn to Variable 10 and then to High. Blend for about a minute.


This morning I made my favorite smoothie so far which is the Banana + Kale Cream Smoothie and I am still riding high off the energy it gave me.  Oh so yummy and nutritious.

Banana + Kale Cream Smoothie
1 cup Almond Breeze Unsweetened Vanilla Milk1/4 cup Fage 0% Greek Yogurt1 frozen banana1 scoop Lean Dessert Banana Cream Protein Powder2 Kale Leaves, chopped1 tbsp chia seeds3-4 ice cubes
Place the above ingredients in the order listed in the Vitamix. Turn it on at a Variable 1 quickly turn to Variable 10 and then to High. Blend for about a minute.

This smoothie is delicious and very filling!
I had a hard time deciding what to have for breakfast this morning Green Monster or Chia Oats.  This is a super hard call for me because I love my oats so much but also love starting the day off with a green smoothie.  I decided that I am not going to think as Chia Oats as only for breakfast and that I am allowed to eat them for lunch or dinner if I want.  That way I can incorporate all the foods I love into my day and not have to struggle with decisions so early in morning!  Honestly, I realize I have "quality" problems to deal with and am very blessed in the big scope of things.

So I am super excited. I am going on assignment as a blogger today to Sprout Health and am taking a Healthy Lunches and Dinner Cooking Class.  I can't wait to see what is in store for today.

I struggle with healthy lunch and dinner ideas so this is a very appropriate class for me as well.  I am off to get ready for the class and please check back so I can share what I learned.
