Happy Monday! How was your weekend? I had the chance to cross an item off of my life bucket list with mine: arm knitting.
A friend hosted an afternoon get-together complete with appetizers, tea and arm knitting. I swear we’re not 70 years old
We snacked on chicken rolls, lebanese beef bites, fruit, veggies and bean dip.
Sipping on our Indian black tea, we joked that all we were missing were big hats and a game of bridge. Then dove into teaching ourselves how to arm knit courtesy of a video .
The first few steps were the hardest and most confusing, but after I got it going it was a breeze to finish.
It turned out super cute- big and comfy, just the way I like it! I’ve never knit anything before and it’s fun to know that I can do it….at least on my arms
Besides my first knitting experience, the best part of the weekend had to be the greek chicken I made for me and the hubs.
1.5-2 lbs chicken tenders
1/2 lemon, juiced and zested
2 large garlic cloves, minced
1 tsp oregano
2-3 T Olive oil
t tsp vinegar
s/p to taste
Whisk together lemon zest, juice, minced garlic, oregano, oil, vinegar, s/p. Coat chicken tenders to marinate in the fridge overnight or for 8 hours. Pan sear until cooked through. Serve with tomatoes, cucumber and light feta sauce in a pita or over salad greens. Light Feta Sauce
1/2 cup nonfat plain yogurt
1/4-1/3 cup feta crumbles
1/2 lemon, juiced
1 garlic clove, minced
1 T olive oil
1/2 tsp oregano
s/p to taste (be generous!)
Mix all ingredients together. Taste and adjust seasonings. (You may need to add more lemon juice and salt and pepper.
I combined the chicken, cucumbers, tomatoes and feta sauce in a pita and served it with spicy homemade oven-baked fries.
My hubby’s first words after biting into it- this is a mediterranean MASTERPIECE.
I agreed! All of the flavors together are light and bursting of flavor. I love the combo of salty feta with creamy yogurt and light lemon juice. Ahhh heaven! You know this is killer when I really wasn’t that interested in the fries and more the sandwich! It’s usually the other way around for me. What can I say? I love me some fries!
