Gluten Free Vegan Mini Pizzas & A Vehicle for Dressing

You all probably know by now that if there is an "easy" way to make something for dinner, I'll find it. I am a huge fan of simplicity in every area of life. So, when it comes to making pizza...I bet you already know the rest.

We've had pizza parties and made both regular and gluten free pizza crusts from scratch. While that's fun once in a while, it's definitely not my scene. Enter the bagel. A favorite food of mine since childhood, and one of the most difficult things to give up when we went gluten free. Now, we aren't eating these often, but when the pizza craving hit the other night they sure fit the bill. (BTW...we'd eaten all the pizzas with white cheese on them before we remembered to take a photo. The white cheese pizzas looked better. LOL!)

I won't give you any brand names since we're still trying out several to see which gluten free bagel we like best. But, if you want to make these little goodies all you'll need is gluten free bagels, a low sodium pasta sauce, and an assortment of toppings (whatever you like best). It's a lot of fun to put out chopped veggies, assorted vegan cheeses, and a couple of different sauces and let everyone customize their pizzas. Once they are topped just pop them in the oven at 350 degrees for about 10 minutes, or until the cheese begins to melt. That's it! Easy!


I referred to the salad in the photo as a "vehicle for dressing" because that is exactly what most tossed salads are to me. However, I gave up dressings a while back because they were just too processed and contained some seriously icky ingredients. Imagine my excitement when the good people at ZUKAY Live Foods sent me these dressings to review.

While I'm thinking about it let me tell you that I will NOT review any product or company that I don't really really like (and yes, I have received a product or two that was disappointing). I'm not here to sell you guys anything or to bash any companies. What I try to do with products it tell you about companies and products that we are impressed with and that we enjoy. As a matter of fact, most of the products mentioned on this blog so far are products we've purchased on our own. And, just because a company sends something for review, doesn't mean we'll be hawking it to you all. That's not our style. If we wouldn't buy it, you won't see it on our blog.

That being said, we like ZUKAY. Why? First and foremost because their salad dressing are living food. Live bacteria that enhance our health are a big priority around here and I'm always looking for ways to slip more fermented foods into the family's diet. Secondly, the flavors of these dressings are really nice. They are tangy, not strangely sweet (like so many of the dressings available at the grocery store), there are no ingredients in these that require a master's degree in science to decipher, and they are very low calorie (just 5 to 15 calories per 2 tablespoon serving). Verdict; Highly recommended. I'm planning to order their salsas and relishes in the near future.
