I hope everyone is having a great day so far. I have had a great day at work, squeezed in a workout and have just finished making a scrumptious batch of Gluten Free SunButter Oatmeal Cookies. Me or my, what a wonderful day! I love it when I get to do all the things enjoy- training clients, working out and of course my all time favorite, BAKING. I found this Gluten Free recipe on the back of my Trader Joe's Rolled Oats and adapted it slightly to use one of my favorite nut-butters- SunButter.

Gluten Free SunButter Oatmeal Cookie Recipe
adapted from Trader Joe's recipe for Gluten Free Oatmeal Cookie Recipe 1/4 cup butter1 1/4 tsp baking soda3/4 cup evaporated cane sugar3/4 cup dark brown sugar2 eggs 1 tsp vanilla1 cup SunButter3 cups Trader Joe's Rolled Oats 6 oz semi-sweet chocolate chips 1/4 cup ground flax seeds 1/2 cup raw sunflower seeds Preheat oven to 350 degrees. In a large bowl, combine sugars and butter and beat until creamy. Add eggs, vanilla and baking soda and mix well. Stir in oats, chocolate chips, flax seeds and sunflower seeds. Place a tablespoon full of dough on a lightly greased cookie sheet about 2 inches apart. Bake 10-12 minutes until lightly brown around the edges. Cool completely. Enjoy! I believe it has been a few days since I have proclaimed my love for Oats so thought I better tell you that yes, I still love my bowls of oats and made a killer bowl this morning. I get excited about the little things in life and buying this bag of Trader Joe's Rolled Oats made me unbelievably happy. I know, weird, huh?
I had a few extra minutes this morning and whipped up a warm and comforting bowl of: Berry Bliss Chia Oats 1/2 cup rolled oats1/2 cup water 1/2 cup unsweetened vanilla almond milk 1 tbsp chia seeds1 tsp ground cinnamon
Combine above ingredients in small pot and cook over medium heat for 5 minutes. Remove from heat and top with: Handful of fresh blueberries and raspberries1 tbsp raw sliced almondsdrizzle of agave nectar
Delish!

I will move on to my love of SunButter next.....
I noticed on the SunButter site that you can order these 1.5 ounce servings of SunButter which would be perfect for school lunches. And they are cute too. That is always important!
