Happy Monday! I know those two words don't seem to go together but after making this fudge recipe, you may think differently.
As you know, I have a sweet tooth, and sometimes it's hard to satisfy that craving when sugar is so bad! My solution, look at Chocolate Covered Katie. There most be something in the name "Katie" because she's ah-maz-ing. There is so much to her site, I just get lost in it. What I love most is that the ingredients she calls for are staples I already have.
Exhibit A: FUDGE! I was browsing the site when I came across it. Of course, I couldn't resist. What girl doesn't like fudge. So, if you have the Monday blues, I think this recipe will help :-)
ü 8 Tbsp. coconut oil
ü 1 large ripe banana
ü 1/2 tsp. cinnamon
ü a pinch of salt
ü add sweetener if desired (we put a few drops of stevia in)
ü 4 Tbsp. cocoa powder
1. Blend the above ingredients.
2. Place into a Tupperware container.
3. Put in the freezer for a few minutes, or place in refrigerator for a couple hours.
4. If kept in the freezer, leave time to thaw.
5. Eat and enjoy!
Verdict:It tasted like chocolate covered bananas! I also found it tasted better as it sat longer. Delicious!
