After a busy, whirlwind weekend, I have returned to the homeland. That being Wisconsin, of course. I don’t even know where to start with this post because the last three days were jam-packed full of times with good friends (with a family member thrown in for good measure).
Early Friday morning, I made a quick stop at the co-op for some breakfast + driving snacks for my journey to Minnesota. Little did I know, my co-op has a ridonkulously awesome A.M. oatmeal bar…
1 cup steel cut oats
2 tbsp. coconut milk
dark brown sugar
1/4 cup raisins
raw pepitas (pumpkin seeds)
Oh. My. Oatmeal. Coconut milk makes for the creamiest, most delicious add-in ever. Along with a jumbo coffee (because caffeine is desperately needed when one is driving four hours) and snackage…
The oatmeal filled me up quite beautifully, so I actually ended up eating these as snacks throughout the weekend. Not like you care. But ya know…just sayin’.
When I arrived in the Land of 10,000 Lakes (although, apparently Wisconsin TECHNICALLY has more), I met up with a bunch of ladies I used to work with for lunch. I got the Portabella Melt (with pepperjack and guacamole, nuff’ said) with a side of cottage cheese…
It was so good to catch up with Kelly, Laurie and Lori (who also happen to read the blog – HELLO LADIES!). Then, at 2pm, I had a very important date.
Nope, not with Mr. Lawyer (unfortunately), but with a much more important man in my life – MY GRANDPA! We chatted for a couple hours and caught up on life. He is 85 years old, stubborn and thinks he is always right. In other words, we are very much alike, minus the whole 85-year-old thang.
I had my next date…with my college bestie Jamie!
It was Ms. Jamie’s birthday on Thursday, and so naturally we celebrated by doing three things:
While shopping at the mall, guess who was asked to be on the news?
Look familiar? Ah yes, there was apparently a stabbing (violent, I know!) at a local mall a couple weeks ago and so one of the news stations was doing a follow-up on mall security.
If you would like to see Jamie + I and hear my wise advice on how to stay safe at the mall, click here .
After my 15 minutes seconds of fame (hey, at least my cousin was watching the 9pm local news on a Friday night!), we headed out to dinner, ate LOTS of food and watched our all-important debut on the local Twin Cities news.
The next morning, Jamie and I headed out for a 4.5 mile run. Although slightly chilly, it felt so good to run outside with one of my all-time fave running partners again. Then, I quickly showered, chugged some coffee and met my high school friend Jess out for lunch to meet her new boyfriend. I told you this weekend was jam-packed.
After we ate, we had to stop by McDonalds to pee. When one goes to McDonalds, one often comes out with one of these as well…
CARAMEL SUNDAE HEAVEN. And only $1.08. Can’t beat it.
You also can’t beat a homeless man holding the door open for Jess + I to leave McD’s and saying, “Hey beautiful. Let me open the door for you. I’m not even drunk.”
Then we went shopping at Urban Outfitters, where I randomly ran into Brooke ! I can’t believe I didn’t know about her FABULOUS blog until now. She is a tres chic fashionista and veggie, which I totally love. Her and her friend Hannah were so sweet, and we chatted for a couple minutes before parting ways.
Then, I met up with the lovely Emily for coffee chat! We met once before when she was in Madison, and it was so much fun to catch up with her again. She is adorable, fun and we have lots in common. AND, she brought me these heavenly peanut butter chocolate cookies. Gah, they were AMAZING!
Next up…dinner out with my ladies!
Time spent with best friends? Check.
Twas’ a good night.
This morning, I met up with my very first bloggie friend and now real friend Angharad . I heart this girl. We went on a 7-mile run outside and then out to brunch at Minneapolis’ infamous French Meadow . Yes, they are the same people that make all the wonderful bread many of you eat.
Angharad got the southwestern hash with chicken sausage (amazing)…
I went for the zone omelet (egg whites, spinach, goat cheese + sundried tomatoes)…
And we both went for multiple cups of coffee.
I grabbed a cranberry white chocolate scone for the road…
…because you can’t NOT buy an organic cranberry white chocolate scone when you have the opportunity.
Insert 4 hours of driving followed by grocery shopping, eating, unloading groceries and laundry time.
I am pretty sure my laundry has been sitting in the dryer for about 20 minutes while I finish this post. People are probably wondering why I am sitting on my computer when my clothes are obviously done. LAYOFF FELLOW LAUNDROMAT USERS! When a girl’s gotta blog, a girl’s gotta blog!
With that, here is the winner of the breakfast giveaway…
