Fresh Cherry, Pistachio and Feta Salad

Good Evening:

It has been a great day and I am really looking forward to the long weekend. Memorial Day... time for a feast! My evening clients just left and we were all talking about all of our plans and what we will be making for the weekend. My kids have mentioned making Bison Burgers... so we shall see if that sticks.

Anyways it is 7:18pm, and my kitchen is officially closed. I have kept on track so far today and did allow myself one little indulgence.

Tonight's dinner was amazing. I love Fresh Cherries and decided to use them in my salad tonight.

Fresh Cherry, Pistachio and Feta Salad

2 cups European Blend Lettuce Mix
1/2 cup Mann's Sunny Shores Broccoli Slaw
1/2 cup Shredded Red Cabbage
1/4 cup Matchstick Carrots
12 cherries halved
1 tablespoon chopped pistachios
.5 oz of Feta Cheese

Dressed with 1 tablespoon of Universal Flaxseed Dressing- (from The Flexitarian Diet Book )
1/4 cup lemon juice (~ juice from 2 lemons)
1/4 cup flax oil
1/4 cup white wine vinegar
1 Tablespoon Dijon mustard
1 garlic clove, minced
Salt and Pepper to taste

This is a great combination! Love the fresh cherries and pistachios together and the greens had a bit of bite to them. I always enjoy the salty touch from Feta and a little cheese goes a long way. This is definitely a winner. The only thing I may do differently is dress it with my normal Olive Oil, Dijon Mustard and Balsamic Vinegar dressing mix. I like it a little better.

My afternoon snack today was a Peach Green Vibrance Smoothie. I am branching out! I really love the way these smoothies make me feel. So it may not look appetizing but this was one of the best so far. I think the key is Trop50 OJ. It cuts the grass taste and you only have to use a little. I am almost to the end of my Muscle Milk Whey Powder and wonder if any of you have a favorite Protein Powder that you like? Please let me know.

I think I may go with Jay Robb Whey Powder, I heard that it is good and is sweetened with Stevia.




Peach Green Vibrance Smoothie

1/2 cup of Trop50 OJ- 25 calories
1/2 cup of water- 0 calories
1 cup of Frozen Peaches-80 calories
1 packet Green Vibrance- 45 calories
1 scoop of Muscle Milk Light Vanilla Creme- 100 calories

250 calories

Put in blender and blend for 30-60 calories. Enjoy!





And last but not least, I ended the evening with the new Skinny Cow Truffle Bar- in French Vanilla. This is my answer to portion controlled dessert. Back in my Weight Watcher days, I ended the evening with a Skinny Cow Ice Cream Treat and it really helped me stay on track, that and Fiber One Cereal. I have not forgotten those principals, I just have a little more freedom in my choices now. For example, I would never eat peanut butter or avocado because of all the points they would add to my small 20 point allowance. But I love them both and am glad to have them back in my diet again.

So I had to try these new Skinny Cow Truffle Bars and I was not disappointed. I loved the French Vanilla. It was a perfect little 100 calories treat. Each bar is only 2 points in WW language and have 2 grams of fat and 3 grams of protein and fiber. My only caveat is that it is a processed food and I am trying to buy less processed and more natural foods but if this is going to help me stay on track and bring the scale down then I don't think a few boxes are going to kill me. Baby steps....
