I haven't been making breakfast lately... it's usually just toast or quick oatmeal with raisins or some all-bran cereal and fruit. And coffee of course. So, here are some french toast recipes I found that won't sacrifice your healthy morning routine :)

My Favorite French Toast Recipe
Low Fat French Toast Strata
1 1/2 cartons of Just Whites (egg whites)
1 brick of low-fat or fat free cream cheese
1/2 c. light or real syrup ( or more if you would like)
2 tbsp. vanilla
1 tbsp. cinnamon (lots!)
2/3 c. skim milk
1 loaf or close to it 100% whole wheat bread
Cut bread into cubes – like 1/2 in. by 1/2 in.
Place cubes into sprayed baking dish you are planning on serving in
In a bowl, mix egg whites, syrup, milk, cinnamon and vanilla.
Cover the bread with the mixture.
Cut cream cheese into little pieces and place throughout the dish.
Cover with foil and keep cold in the fridge.
Let dish set for 10-12 hours/overnight at least so bread is soggy.
Bake at 375 for about and hour or until egg is cooked throughout!
Serve hot with syrup!

Just Remember: The secret to all french toast is to bake it! Where the recipes all say to cook on a griddle... don't listen to them, put in a baking dish and bake it. The texture becomes more soft in the middle and crispy on the outside.

Coat sandwich in egg mixture and cook over medium heat on a nonstick griddle until bread is lightly browned on both sides and cheese is melted. Serve with berries. Sprinkle with powdered sugar, if desired.

Blueberry Orange Sauce for French Toast
Blueberry Orange Sauce 2/3 cup Blueberries 2 tbsp Sugar 1/2 cup Orange Juice 1/2 tbsp Butter 1 tsp cornstarch
Start the sauce first. Place blueberries, sugar and orange juice in a small saucepan over high heat. Bring to a boil then set to a simmer for 5 – 10 minutes (until sauce is deep purple-ish color).
While sauce is simmering, combine the eggs, milk, cinnamon and vanilla. Heat a skillet on medium heat and spray with butter spray. Soak each piece of bread for about 5 seconds on each side then place on the heated skillet. Cook until golden brown on each side, approximately 5 minutes total.
To finish the sauce, put on low heat and add the butter. Then, if you need to thicken it more, combine the cornstarch and 1 tsp of water and mix together. Then add to the sauce. Continue to stir until thickened, which takes 1 – 2 minutes (OPTIONAL: Add some freshly sliced bananas). From: willjogforfood.com
Stuffed French Toast
Makes: 4 servings
Ingredients 1/2 cup fat-free cream cheese 2 tablespoons plus 1/2 cup strawberry jam 8 1-inch slices French bread 2 egg whites 1 egg, slightly beaten 3/4 cup fat-free milk 1/2 teaspoon vanilla extract 1/8 teaspoon apple pie spice Nonstick cooking spray
Directions
Combine the cream cheese and 2 tablespoons jam. Make a slit in each slice of French bread to form a pocket; fill each with about 1 tablespoon of the cream-cheese mixture.
In a small bowl, combine egg whites, egg, milk, vanilla, and apple pie spice. Lightly coat a nonstick griddle with cooking spray; heat over medium heat.
Dip the bread into the egg mixture, coating both sides. Place slices on the hot griddle. Cook about 3 minutes or until golden brown, turning once.
Meanwhile, in a small saucepan, heat the 1/2 cup of jam until melted, stirring frequently. Pour over French toast.
