Food Porn and Tips for Gradual Veganism

Posted Sep 14 2009 9:00pm
Over the last few days, I've tried to balance healthy eating with a few splurges. On days when I work out hard, I often have a huge appetite. I have noticed lately that the more I eat fruit and veggies, the more I crave them. I still crave chocolate and salty foods but now I am also having cravings for spinach and kale and berries. I read about how food cravings change once you start eating cleaner and healthier but I really never thought I could prefer a spinach salad over a chocolate chip cookie. I really hope this lasts. I highly recommend this very well-written blog,http://www.choosingraw.com/
for tips on how to start eating a more raw and vegan diet. The author, Gena, gives great tips for how to start slowly so that you don't get frustrated and give up. What I took away from her suggestions is that it is really easy to eat well. It basically means eating food in its purest form. Many of us already do this with salads and grains and nuts, etc. I think one thing many people forget about eating vegan is that it does NOT mean sacrificing taste or health! For instance, some of the most tasty foods on earth are vegan including:
avocados
hummus
peanut and almond butter
tofu
pure dark chocolate
blue berries
many type of pasta (obviously not egg pasta)
and the list goes on!

Here are some pics of a few of my meals during the past week:

Tuesday night's dinner, two whole wheat tortillas stuffed with veggie refried beans and eggs (spiced with chili powder and cayenne pepper and sea salt) and a salad made from kale, cherry tomatoes, and baby carrots and dressed with olive oil and amino acids.
Salad made from spinach, Japanese cucumber, and cherry tomato from Thursday's lunch.
My East Asian fusion fried rice: Japanese short grain rice with egg, tomato, tofu, and Korean mochi rice hot sauce all fried up Chinese style.
