Food Journal needs help adding fruit and veggies!

I am so amused by my friend.

He has just discovered the art of calorie counting and now carries around a notebook where he logs all of his calories, minus his workout.

I snuck a peek at this book - with permission, of course - and started laughing hysterically.

"What's so funny?"

"Well, the FDA recommends a certain number of servings of fruits and veggies per day. Even though you've had less than your daily intake of calories, where is your NUTRITION?"

He argued that he'd had a very large salad - made strictly of spinach. Note - spinach is one of the only veggie oriented things this guy will eat.

Can anyone suggest a low calorie something I can make this guy that is primarily veggies or fruit - and here's the tricky part - that he won't notice is veggies or fruit??? Thanks!
