I can’t believe christmas is in 4 days. Whenever I come home from school I completely lose perception of time- I never know what day of the week it is :/ I’m going to soak up my days of no responsibilities while I can.
I had some left-over pumpkin from yesterday’s breakfast and I wanted to use it again today. I could have made some more oatmeal but I always like to switch things up. Enter: Spiced Pumpkin Pancakes.
Topped with cinnamon yogurt and smooth, drippy peanut butter. I’ve never been a fan of straight syrup on pancakes. I like the thickness of yogurt and the staying power of nut butter. I’ve tried a few different recipes for pumpkin pancakes and they always turn out dense. This recipe made fluffy cakes and were perfectly spiced . And of course there was coffee
Drank out of a classy Census Bureau mug. I realized this morning that my parents have quite the collection of uninteresting mugs. But like mom always says….it’s what’s on the inside that counts:
I saw this at Starbucks the other day and had to buy it. I’ve tried the Christmas Blend but apparently that’s different from the Winter Blend. Which is also different from the Holiday Blend. If I weren’t so obsessed with coffee I would think that’s silly. If.

Today I’m going to be working on a project I deemed Operation Fix My Room. I’m really clueless when it comes to home decor but I do know when something looks…bad
White walls + dirty brown trim = blech. I’m trying to transform my jail cell into something beautiful before christmas. I’m going to tackle the trim today and hopefully divine thoughts of decorating and colors will pop in my head.
I went to the store & got the paint and started taping the walls but I needed to break for lunch. I heated up some left-over Pad Thai because there’s still copious amounts in the fridge
Jazzed up with some steamed spinach and white beans. This was even better than the first time I made it- all the flavors get a chance to mesh.
