Flax Waffles with Bananas, Berries and Almonds

Good Morning!

It is a wonderful day here in Austin, TX and we started the morning off right with delicious Flax Waffles with Bananas, Berries and Almonds. Yum! I know I am on a bit of a flax kick right now but I need to try out all the goodies that were sent to me and today I used the Pizzey's Pancake and Waffle Mix. I am so excited because my family loved this mix.... and they are very suspect of my pancake/waffle making days because they know I try to sneak in some good stuff. These tasted and looked pretty harmless to them and they ate them up!!

I thought they were awesome and it was a great way to start my Saturday morning along with a cup of coffee.




Flax Waffles with Banana, Berries and Almonds

1 cup Pizzey's Premium Pancake and Waffle Mix
1 cup Skim Milk
1 DHA Omega 3 Egg
1 tablespoon canola oil

top with

1/2 banana, sliced
Handful of Raspberries and Blueberries
5 chopped Almonds
Drizzle of Agave Nectar

I am happy to report that the scale was down this morning, dipping into my happier zone and that I am motivated to keep it there. I set a more realistic goal for myself and also had a great run on the treadmill last night that burned 500 calories. With summer here, and the kids home, I am going to have to be more creative with my workouts. I promised myself that I would get in at least 30 minutes of cardio a day or alternatively 1 hour 4 times a week and weights on the off day. I felt much better this morning and was rewarded with a "happy" number on the scale. I am in the healthy zone but just have been letting a few of my bad habits creep back in, so that is why I weigh myself daily. It is much easier to lose a few pounds than trying to lose 10 lbs.

I also am asking myself "am I really hungry" before eating. My Eating Coach strategies are kicking in and lately I have been eating when I know that I am not really hungry. So I am taking a moment to really think about what I am putting into my mouth and making sure that I am truly hungry. It is so much more satisfying to eat when you are hungry than it is when you are not. I also noticed that I need to keep an eye on portion size. You really get to eat whatever you want if you don't eat a lot of it.... a cookie here, a bite of ice cream there, will not hurt your goals if you don't over do it!

SO with all that in mind... my nephew and brother-in-law are in town for the night and we are going to fire up the grill and make a feast!! On the menu tonight:

Grilled Salmon
Turkey Burgers
Hot Dogs (for the kids- 100% Beef)
Caprese Pasta Salad
Grilled Corn
Watermelon
Super Salad
Cookies and Ice Cream for Dessert

I love summertime.

Off to lift weights and drink some water! Have a great Saturday and I will have recipes to share later this evening.
