Finally green

Morning loves!

I’m SO glad I still have readers after a summer long hiatus, love you guys!!!
I apologize for not posting last night- I couldn’t take a picture of my dinner because my camera battery was charging, so I wanted to wait until I had a picture for you to post! 
Last night’s dinner was quick but delicious, and BFL friendly! Definitely a do-over. 
I had a mexican-inspired salad that contained: 
  • ~3 c mixed spring greens
  • 3 oz sliced chicken breast, cooked in EVOO spray with lime and Mrs. Dash chipotle seasonings
  • 1/4 c chopped red and yellow peppers 
  • ~3 tbsp medium salsa
  • 1/4 avocado 
  • ~ 1 tbsp sliced black olives
YUM! 
For dessert I had a peach, and then a couple hours later my stomch was growling again and I had 3 graham crackers   left over from camp. I know, I know, not the healthiest choice but it was what I had right there- and I was proud of myself for not going overboard. I’ve been known to eat a WHOLE PACKAGE of grahams (this summer!) so three was a good cutoff for  me. 
As for this morning, I was SO excited that my breakfast actually turned out how I wanted!
But before I ate, I headed out for a brisk 30-minute hill run. It was cool this morning, which was a nice change from the 90+ degree days we’ve been having! 
When I got back in I was starving, so I quickly whipped up a delicious green monster!
And guess what? This time it was ACTUALLY GREEN!!!

The pic did not do it justice, I promise you, it WAS green!!
Musta put extra spinach in this time! It was awesome those, definite winner, my 
Strawberry Kiwi Banana Green Monster
  • 8 oz nonfat milk 
  • 1 cup organic frozen strawberries
  • 1 medium banana 
  • 1 large kiwi 
  • ~2 heaping cups organic baby spinach 
  • 1/2 c water 
It made 1.5 HUGE cups! Awesome! And filled me until a few minutes ago, when I had 1/2 cup low fat cottage cheese  and a small handful of Annie’s whole wheat bunnies (great alternative to normal “snack foods”!). 
In about an hour I’m off to pick up Peko, my lovely friend from camp- she’s from England and she’s staying here for a few days before she goes off on a Trek America trip and I’m off to Canada! It shall be a fun few days! We’ve got plans for sushi, a trip to newport, a possible sunset cruise, and a day in Boston!  So exciting!
