Fiesta Fajita Protein Pancakes

What is one to do when they have a craving for fajitas but no wraps or cheese? Improvise, with fajita pancakes!

These pancakes cook of very quick. The only somewhat time consuming task in chopping the peppers 16g carbs/ 2g fat/ 18g protein These were very tasty topped with salsa and sourcream (or greek yogurt). Basically it taste like fajita in pancake form I love the texture of these pancakes especially with the chopped pepper mixed in!

Fiesta Fajita Protein Pancake

Ingredients: Instructions
•2 tbsp corn meal (I used course)•1 tbsp coconut flour•2 tbsp unsweetened whey

•1/4 tsp baking soda

•1/4 tsp baking powder

•1 tbsp apple cider vinegar•2 tbsp salsa•1/4 cup finely chopped green and red peppers

•1/4 cup egg whites

•1 tbsp almond milk

•salt, garlic, fajita seasoning

1)Mix all dry ingredients.2)Add egg whites. Mix3)Add salsa, almond milk, and peppers mix well.

4)Add apple cider vinegar. Mix well

5) Start making them pancakes!
