Good Evening and Happy Monday!

or Happy End of the Day Monday.... we survived!

Mondays can be tough but I actually enjoyed getting back into the swing of things.  I had a busy morning with teaching Bliss Boot Camp, and then two personal training clients but of course had time to eat and actually ate 3 of my favorite meals today. 

The only thing missing today was a bowl of oats!  I opted to have an Almond Butter & Raspberry Jam  Ezekiel English Muffin.


 

I absolutely love Ezekiel English Muffins and the few days that I had to go without has only made my craving for them stronger.
 
Almond Butter & Raspberry Jam Ezekiel English Muffin

1 Food For Life 7-Sprouted Grain English Muffin
1 tbsp MaraNatha Raw & Creamy Almond Butter
1 /2 tbsp Oregon Red Raspberry Jam
Handful of Fresh Red Raspberry

Great way to start the day!  

Lunch was a Black Bean and Egg Taco.  This is another one of my favorites.  So satisfying and delicious.



Black Bean and Egg Taco

1 La Tortilla Factory Hand Made Style Corn Tortilla
1 egg, fried
1/4 cup fat-free refried black beans
Sprinkling of Mexican Cheese
2 tbsp of Guaca Salsa

This is such a quick lunch and would also make a great breakfast.  I am usually not up for eggs first thing in the morning but this is great energy food.  The egg provides a nice source of protein, the black beans are loaded with fiber and protein, the cheese has calcium and avocado provides you with a good fat.  Yum.

This afternoon the kids had activities-- Destination Imagination for Emmet and Theatre Dance for Zoe. So by the time I got home I was famished and needed a quick dinner before training evening clients.  My default dinner is always a veggie burger and I also had leftover salad from last night so I was able whip up a healthy dinner in minutes.




Feta Hummus Veggie Burger

1 Boca Burger Original Vegan Burger (only 70 calories)
1 Oroweat Whole Wheat Sandwich Thins
1 tbsp Sabra Hummus
1 tbsp of Feta Cheese

Kitchen Sink Salad

Red Cabbagge
Spinach
Broccoli
Cauliflower
Tomatoes
Carrots
Bell Peppers

Dressed with 1 tbsp of dijon mustard, 1 tbsp Balsamic Vinegar, 1 tsp olive oil

About right now I am thinking of indulging in a little dessert...... we have Vanilla Bean Pudding and Macaroons in the house so I am thinking I might have a small serving of both.  The scale was slightly down this morning but still need to work on it a bit more to get back to my "happy" weight. 

I am looking forward to a nice run in the morning and a noon yoga class tomorrow.  So I will be catching up on my exercise as well.

So I have to tell you that I am off to watch a bit of the new Bachelor.  It is such a cheesy show but I enjoy making my husband watch a little of it with me just for his snide comments. 

I wish you could seen my hubby's face when they started piping in "On The Wings of Love" while Jake and his date where in the plane.  Oh my.... I have been laughing so hard!
