Hey friends, Sorry about my strange posts yesterday. My eats were really strange. First, breakfast we went to the usual taqueria for some ‘Family Time’. I had a half bean, egg, potato burrito (same as always). Then I completely skipped lunch because I was baking all afternoon and was tasting my bakes as they came out of the oven. When I make new recipes, I always have to taste them to make sure they’re safe . Max came in and took me to dinner. We went to the local American Diner, Elli’s. I had a Roast Turkey sandwich on a chibatta roll with brown mustard, banana peppers, spinach, tomato, and romaine lettuce. No mayo, please! I turned both halves into open faced sandwiches because I wasn’t too hungry from all my sweet bites. We split a carrot cake cupcake at the restaurant. I had half of a half just to taste it, it was delish! I love carrot cake cupcakes, especially with cream cheese frosting, you can keep the butter cream, It’s just wrong on the carrot cake!
So now that we’re all caught up let’s talk about today.
The family was bustling to get out the door for church, I can’t go because the ankle is screaming ‘Sofa! Sofa! Sofa!’. So I made some Pumpkin Spice Pancakes to help get them out the door. They were quite the hit… again!
But before I can show you my chocolate chip-cinnamon version of the famous Pumpkin Spice Cakes, I have to show you my half eaten Lemon Cupcake. Why, you ask? Okay well I ask myself why… because I made them yesterday and made this lemon whipped cream topping for it instead of the butter cream frosting so I had to keep them in the fridge over night. I had to try them to make sure they didn’t dry out, my mom was freaking me out and I was thinking I’d have to make a new batch this morning. Thankfully Jaemen to the rescue as the official lemon cake taster, if he says go then we go and he definitely wanted another so I think I’m safe.
I was planning on having a few pumpkin cakes but since I tasted the cupcake I kept breakfast mini!
