Ezekiel Cinnamon Raisin French Toast with Banana and Berries

Good Morning and Happy Monday!

I had a busy day of celebrating yesterday! Yah! Yoga Yoga Teacher Training is officially over. We had an awesome day of learning about where to go from here.... on to the next 300 hours! I personally need to take some time and let this all sink in and am not ready to jump in but many of the other in class have already signed up for Advanced Studies. Kudos to them! I am interested in several things that are offered but really am excited about reclaiming my weekends and focusing on family right now. I would like to teach for a while and figure out what the next step may be or let it evolve organically. I also told my husband it was his turn to do some self exploration so want to allow him some time to do the things he wants as well!

We then did a really cool yoga practice incorporating the Soham Mantra- I am that, that I am.. This was very empowering and I loved it. We then did a meditation in which you are called to come up with your own Mantra, something that you want to live by and then a graduation ritual in which you get to take a breath with each student and share that mantra. The whole experience was extremely moving, especially looking into each student/now teacher's eyes that you have spent 200 hours with walking down this path. Wow!

Now, back to reality... for breakfast this morning I made the most delicious Ezekiel Cinnamon Raisin French Toast.
2 slices Ezekiel Cinnamon Raisin Bread
1 egg white

Dip bread in egg white and cook it in a medium skillet sprayed with cooking spray. Cook for about a minute each side. Remove from heat and top with:

1 tablespoon Naturally More Peanut Butter
1 small banana sliced
Raspberries
Blackberries
Drizzle of Honey

Wow! This was a real treat!
