So…. these aren’t the prettiest meatballs… but I CAN EXPLAIN! Many people asked me why are these meatballs green? I used fresh parsley which took over the color of the entire meatball. The main ingredient in the recipe is eggplant which has a grayish color to it when you remove the skin. LESSON… don’t judge these vegetarian meatballs by their looks… they actually taste pretty damn good.
Anyway, I decided to make these for a potluck with a bunch of my friends. I saw the recipe on a blog a few weeks ago and was excited to make them ever since. They really couldn’t of been easier to make.. and everyone enjoyed them… there was not one left.
