Good morning friends! This weekend was a mixture of relaxing and blowing noses. The Scientist came down with a bummer of a cold so most of the weekend was dedicated to sitting on the couch and watching a little football.
I also did some work on my goals. I LOVE goals. I have the 31W31 list . I have yearly resolutions. I also do monthly goals . AND I even have WEEKLY goals! I don’t always accomplish my goals, but it gives me something to work towards.
Obviously I have this little blog to help me stay accountable, but I also have a great group of friends to help me with those weekly goals. Last year around this time my pal, Karen, sent out an email to a few friends asking if any of us were interested in creating a weekly email group that would set a list of long term goals and then check-in every Monday with updates on weekly goals that helped to achieve those goals. We all participated for 52 weeks straight. We just started back up again this year and we are on a roll!
To celebrate our new 2012 group we met up at Karen’s on Sunday for a chill Girls Goals healthy lunch to chat about our goals, which really means that we ate and talked…a lot.
My contributions for the healthy lunch were all centered around zucchini. Fortunately Gina from SkinnyTaste.com has some great ideas that were easy to execute.
The carpaccio was killer. It was tasty and totally easy to make. This is a definite app dish I will be making again and again…and again.
By the way, SkinnyTaste was also the mastermind behind this great potato salad that I made for lunch on Saturday. The Scientist used his Christmas gift to grill up some turkey hot dogs for us and we paired it with the potato salad. So easy and yet so tasty. Check her site out if you haven’t. I’m not paid to endorse her, but I can’t rave enough about her site.
After the Girls Goals Lunch my healthy cooking continued on during dinner too. No need to ruin all that hard work during the day right? I whipped up some oven baked tuna steaks and “creamed” spinach.
Creamed spinach at my house is really just
-chopped up garlic
-a bunch of fresh spinach
- and 1 wedge of Laughing Cow Swiss cheese.
So easy yet so much better for you than the traditional dish.
If my goal was to have a healthy weekend, then I pretty much succeeded. I could have gone to the gym more (at all). I could have probably gone to bed earlier. But I did what I could and for that, I’m proud of myself.
It was good to have just a chill weekend. Taking a moment to concentrate on my goals really helped to get me on track for the week, the month and the year. Now its time to get to marking those goals off the list!
