Did you know that greens (chard, collards, kale, spinach, and mustard greens) are among the healthiest foods on the planet? They are vitamin-rich and full of fiber, boasting lots of A, C, K, iron, potassium, calcium, and magnesium and only 18 calories per cup! The most effective way to prepare greens and preserve nutrients is to add a large squeeze of lemon juice and drizzle oil on them to boost iron and ensure delivery. Also, avoid drinking tea with iron-rich foods or supplements, as the tannins interfere with absorption.
