
Good Morning and Happy Thursday!
I realize that Earth Day was a few weeks back but the kindergarten class at our school is putting on a big production this morning. SO we will be celebrating Earth Day from 9:00am to 10:00am and boy am I excited. My daughter Zoe has been working so hard on this and it is quite the event.
I am going to be a few minutes late due to teaching class from 8:00am-9:00am but I am going to blow out of there and have sent my hubby to take pics for anything that I may miss.
With that being said, I had to get cleaned up this morning and am running a few minutes behind schedule. I still managed to make a the most delightful bowl of my favorite:
Vanilla Date Oats 1/2 cup of rolled oats
1/2 Silk Vanilla Soy Milk with Added Fiber
1/2 cup of water
1 tablespoon of ground flaxseed
1 tsp Cinnamon
Cook for 4-5 minutes over medium heat. Remove from heat and top with:
1 tablespoon of wheat germ
2 chewy dates, diced
6 Blue Diamond Oven Roasted Cinnamon Brown Sugar Almonds, chopped
Enjoy!
I never tire of this combo! IT is simply the best!
Oh wow, my daughter just walked in.... she must be excited! This is a tad early for her to be up and I usually have a hard time waking her up. She is an amazing little girl. She is actually quite shy but when she hits the stage something happens and she becomes a real performer! I love it! She surprises so many people because she is generally reserved and quiet at school. She does not mess around, she follows the rules and I hate to admit it, but is the class pet. But when it comes to singing and performing she just let's loose and belts it out! Yah!
After the celebration, I am going to be running errands to get ready to leave for Phoenix tomorrow! The big wedding weekend is here and I finally get to wear my "hussie shoes" and dresses that my mother so generously bought me at Anthropologie. I also found some jeans that I actually like and am going to pick them up from the alteration shop today! I am so excited!
Zoe is looking at me with her big brown eyes, telling me she needs some breakfast to give her energy for the big show!
