Lately, my diet has looked rather lackluster, so I decided to revive it with some bright and colorfulveggies! I suppose with the cold, winter weather, it’s natural to be drawn to warm, cozy, comfort foods– as demonstrated by last night’s colorlessMac & Cheese with Cauliflower recipe. Even with today’s non-stop snow and gray skies, my day was a little bit more cheerful with twovibrant salads in it! 

My dinner salad included: romaine, tomatoes, red peppers, snap peas, and broccoli, drizzled with balsamic vinegar.

With my salad, I also ate some reheated Mac & Cheese with Cauliflower, which was still delicious on day #2.


Lunch
For lunch, I went to Daedalus with two of my new coworkers for a “Ladies Lunch,” as we called it. For some reason, I was feeling a little shy, so I didn’t tell them about my blog or snap any photos of lunch. (Stand-in photos below.) You’d think after a year of blogging, I’d be cool with telling everyone about it. I dunno… it’s tough to bridge work and personal life for me. Oh well, I’ll tell them soon enough.
At Daedalus, I ordered the Asparagus Salad, which was grilled garlic marinated asparagus with roma tomatoes and goat cheese over baby greens. I asked for honey mustard on the side for dipping.

This afternoon, I also munched on an oatmeal raisin cookie that was leftover from a meeting. It was very, very yummy! 

In addition to being a double salad day, it’s also going to be a double cookie day! The wonderful people at Organica Deluxe sent me a few samples of their new chocolate chip cookies to try. After sampling their Ginger Cookies, I’m pretty sure they will be FABULOUS!!! Mmmmm… cookies!
