Don't Get Burned by Overcooked Meat

We?ve all heard about the dangers of undercooked meat'salmonella, lysteria, e. coli, and other types of contamination that can cause food poisoning?but what about meat that's too well done? It turns out that the heterocyclic amines formed in overcooked meat can trigger colon cancer in animals and, most likely, humans, according to a study conducted last year by the federal government's National Toxicology Program. So how do you strike that perfect balance between undercooking your meat and overcooking it? Marinating meats before cooking, adding a little starch prior to cooking, and turning meats often to avoid charring are all helpful ways to make your meal a little healthier.
