I've found that eating in a diabetic-concious way is good for high-protein, low-carb siets, because it focuses just on that (and good carbs too). These cookbooks are great for that, both by Robyn Webb, a registered Dietician and a nutrition counselor: Diabetic Meals in 30 Minutes - or Less! and Eat to Beat Diabetes. Of course, ALWAYS double-check with your doctor first!
