
I’ve been using Vega Antioxidant EFA (essential fatty acids) Oil Blend in my home-made salad dressings for a year now and there is no going back.

1) SPICY SUN-DRIED TOMATO PRIMAVERA SAUCE

- ¼ cup Vega Antioxidant EFA Oil Blend
- 3 cloves garlic, finely chopped
- 1 large onion, chopped
- ½ green and ½ red pepper, diced
- 6 Roma tomatoes, diced
- 1 cup diced mushrooms
- 5 oz can of tomato paste
- ½ cup sundried tomatoes
- ¼ cup fresh basil, chopped
- 1 tsp each – oregano & thyme
- ½ tsp chili flakes
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
>>>Procedure<<<
On medium heat, fry onion in olive oil for 5 minutes. Add garlic and peppers and cook for 3 minutes. Add remaining ingredients (except for Vega Antioxidant EFA Oil Blend) and cook for 10-15 minutes until Roma tomatoes are cooked in (add a little water if needed). Remove pan from heat and stir in Vega Antioxidant EFA Oil Blend. Makes about 3 ½ cups.
2) BELL PEPPER HEMP PESTO

This pesto is made with Vega Antioxidant EFA Oil Blend and contains Omega-3 and -6 EFAs (essential fatty acids), Omega-9 and -5 fatty acids, monounsaturated fatty acids, chlorophyll and other phytonutrients — plus a load of other great stuff your body loves.

- ½ cup Vega Antioxidant EFA Oil Blend
- 2 cloves garlic
- 1 red bell pepper
- 1 ½ cups fresh basil
- ½ cup pine nuts
- 4 tbsp hemp seeds
- 2-4 tbsp nutritional yeast
- Sea salt and pepper to taste
- Optional: 2 tbsp sesame seeds

In a food processor, blend all ingredients until smooth (except for hemp seeds, which can be added at the end for extra texture). This pesto also tastes great as a pizza sauce, burger topping or even as a dip for crackers and vegetables. Makes 2 ½ cups.
3) MANGO LIME SALAD DRESSING

- 1 can black beans
- 1 large tomato or 2 Roma tomatos
- 1 red pepper
- 1 ripe avocado
- ½ cup finely chopped red onion – 1 cup fresh cilantro
- Juice from one lime
- Salt and pepper to taste

Finely chop tomato, red pepper, onion and cilantro. Drain excess liquid from canned corn and beans. Combine all ingredients in a large bowl. You can serve it right away, but this salsa is best after it sits in the refrigerator for a couple of hours so the flavours can infuse! Serve with corn or rice chips. Makes 4 cups.
