New research by the University of Missouri has shown that dehydrated tomatoes my help protect against prostate cancer.

Valeri V. Mossine, Ph.D., states that ?processing many edible plants through heating, grinding, mixing or drying dramatically increases their nutritional value, including their cancer prevention potential.? Mossine and colleagues have shown that FruHis, an organic carbohydrate found in dehydrated tomato products, provides strong penetrative effects.

The researchers used rats to perform this study, and they were eather fed a control diet or a diet with tomato paste, tomato powder or tomato paste plus added FruHis. All animals were then injected with prostate cancer-causing chemicals.

They found that the animals fed the tomato paste with added FruHis had the longest survival from cancer at 51 weeks compared with 50 weeks in the tomato powder group, 45 weeks in the tomato paste (without FruHis) group, and 40 weeks in the control group.

They also found that prostate tumors were found in 10% of the animals given the tomato paste with added FruHis, compared with 30% in the tomato powder group, 25% in the tomato paste only group, and 60% in the control group.

The researchers also examined the in vitro effects of FruHis and 14 other similar compounds and found that FruHis in a concentrated form protected against DNA damage know to lead to prostate cancer. When combined with lycopene, FruHis stopped cancerous cell growth more than 98% of the time.

I have heard about the benefits of tomatoes many times, but this is the first time that I?ve heard of FruHis. I thought the benefits were mostly attributed to lycopene. The FruHis website offers more information. I often cook with tomato paste, and it?s nice to know that this offers some of the best health benefits.
